Well, it appears I have been hiding these from you! What's more likely is I completely forgot to share them with you. Me and my slow brain. I just have so many things running through my head right now. I would love to share them, but it's just not time.
Did you all have a good weekend? Ours was slow and almost boring. We did have dinner with great friends on Friday, but Saturday we stayed in and ended up eating dinner in our pajamas. Okay, that's not entirely true, Chip ate in his robe and I ate in my pajamas! Some days your just need that, don't you?! Sunday we went to visit Chip's grandma for a short time. She had been sick and it was the first chance we've had to see her since Christmas. We took her a road atlas. Why? She use to love to sit and look at them to figure out where everyone is. We marked where all the kids go to school for her. She was so happy, but pretty tired. I took her some of these cookies, which is what made me realize I forgot to share the recipe with all of you!
We made white chocolate pistachio and cranberry bark during the holidays, so I thought these would be perfect! They are delicious, in my opinion. Check them out!
Pistachio Pudding Cookies
(from Chef In Training)
1 cup unsalted butter, softened
1 cup light brown sugar
1 box pistachio instant pudding
2 eggs
1 tsp vanilla extract
2 1/4 cups all-purpose flour
1 tsp baking soda
1/2 tsp kosher salt
1 cup dried cranberries
2 cups white chocolate morsels
1/3 cup pistachios, chopped
Beat butter and brown sugar until creamy.
Mix int the pudding, eggs and vanilla extract.
Add flour, baking soda and salt. Mix until combined.
Fold in cranberries, white chocolate morsels and nuts.
Drop by tablespoonfuls onto a parchment paper lined baking sheet.
Bake in 350° oven for 11-13 minutes.








Pudding, oh so want pudding. And so don't mind having it in a cookie, awesome idea.
